Fluffy Lemon Pancakes

Pancakes are an absolute weekend favorite in our household!

I usually end up whipping up a batch with whatever flavours I have handy. This time it was a bunch of fresh and vibrant lemon peels!

All you need to up the aroma and taste, is an zest from a whole lemon.

For getting that perfect fluffy texture (check video), you need to use all purpose flour or Maida. Wheat flour won’t give you the same results.

I have also used an egg for this recipe to add to that fluffy texture.

Pillowy Fluffy Lemon Pancakes

Let’s Get Cooking


Makes 5 pancakes


Maida or APF – 160 gms

Egg – 1

Milk – 2 tbsp

Honey – 1 tbsp

Vanilla -2 drops (Essence) / 1 tsp (Extract)

Lemon Zest – Zest from 1 lemon

Lemon juice – 1 tsp

Salt – 1/4 tsp


Mix together all the ingredients and whisk it well such that there are no lumps.

Heat a pan and add a tsp of butter.

Pour the batter onto the pan and cook it on one side for about 2 mins on medium flame.

Flip and cook for another minute.

Serve with butter and honey or whipped cream!
