Both Rahul and I, spent a considerable amount of pocket money on Banana Bread during our college days. So obviously we are big fans of it! Our favourite was the one near my college in Churchgate.
Once we started baking together at home, we wanted to give it a shot ourselves. After a few stumbles in trying out a some recipes, we finally reached these two variants which satiate our want for that perfectly flavoured banana bread, anytime!
In case we don’t have eggs handy, we even have an eggless recipe to fall back on.
Sharing two special recipes from our kitchen
Banana Almond Bread (with egg)
Banana Chocolate Bread (eggless)

1. Banana Almond Bread
Ingredients
Dry Ingrdients:
150 gms all purpose flour
(You can substitute this with wheat flour which will result in a slightly denser loaf. Best results come with a mix of 60% wheat flour and 40% all purpose flour)
100 gms granulated sugar
15 gms desiccated coconut
¼ tsp baking powder
¼ tsp baking soda
Wet Ingredients:
4 medium sized ripe bananas (3 bananas, if large)
120 gms room temperature unsalted butter
2 eggs
4 drops vanilla essence
Garnish:
6-8 Almonds sliced or 1 tbsp of Almond Slivers
Method
Pre-heat the oven.
Mix together the Dry Ingredients.
Beat the sugar and eggs till they are light and fluffy. The colour should turn pale.
Add the dry ingredients and eggs alternatively. Add two drops of vanilla essence every time you add an egg.
Add the mashed bananas. Mix well to make the batter.
Grease a 9×7 inch baking tin or line it with baking paper. Pour the batter into it and top it with almond slices or slivers.
Bake at 160°c for around 25 mins or until the toothpick comes out clean.
Banana Chocolate Bread Whole Wheat Banana Bread
2. Whole Wheat Banana Chocolate Bread (Eggless and Sugarless)
Ingredients
Mashed Bananas:
2 (big) or 3 (medium) ripe bananas (more ripened, better it is)
250 gms jaggery powder\ 200 gms sugar
Dry Ingredients:
280 gms all purpose flour
(You can substitute this with wheat flour which will result in a slightly denser loaf. Best results come with a mix of 60% wheat flour and 40% all purpose flour)
20 gms cocoa powder
(if you don’t want chocolate flavour, you can adjust it against the measure of the flour)
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
Wet Ingredients
120 ml oil
1 tsp vanilla extract
1 tsp vinegar or lemon juice
120 ml water
Garnish:
30 gms chopped walnut
Handful of chocolate chip or chocolate rice crisps
Method
Pre-heat the oven.
Mash the bananas with the jaggery/sugar such that there are no lumps
Mix the dry ingredients, sifted. Now add the wet ingredients along with the mashed banana to make the batter.
Grease a 9×7 inch baking tin or line it with baking paper. Pour the batter into it and top it with walnuts and chocolate chips or crisps.
Bake at 180°c for around 35 mins or until the toothpick comes out clean.
