Carrot-Ginger Soup with Caramelized Walnuts

The weather is getting cooler and the festive season has started in India!

That means a whole lot food and laziness setting in.

That’s why we’ve got you a healthy, yummy soup recipe with the in-season vegetable!


Whether you want to host a dinner party with fancy soups or need a comforting dinner option,
Weekend detox meal or a quick weekday fix,
This soup is your answer to that!

Carrot Soup!

Serves: 2


Carrots: 200 gms, chopped
Ginger: 3 inches fresh ginger, peeled and cut
Mint: 2 tsps dried mint (if using fresh, add about 10 leaves)
Garlic: 2 small pods
Walnuts: 8-10 halves
Sugar: 2 tsps
Salt & pepper to taste


Boil the carrots, ginger, mint and garlic in vegetable stock or water.
Add salt and pepper to this.

Let it cool down. Then puree it either with a hand blender or in a mixer.

For the caramelized Walnuts

Heat a skillet or pan. Add roughly chopped walnuts.

Sprinkle sugar and salt. Evenly coat all the walnuts.

Wait for the sugar to melt and caramelize.

Pour the soup in a bowl and garnish with the caramelized walnuts!
