Now I know that smoothies are tinted with healthy feels. But once in a while, it’s fun to have a smoothie in all it’s glory!
I picked up blackberries during one of my travels and having been calling them in from friends and family any time they come over 😛
So this time around, I made a dessert smoothie out of it 😀
Serves: 2
Ingredients
Blackberries: One cup
Lemon Juice: 1-1 1/2 tbsps
Sugar: 1 tbsp
Milk: 1/2 cup
Vanilla Ice cream: 1 regular scoop
Fresh Strawberry Ice cream: 1 small scoop (optional)
Few cubes of ice
Method
In a pan add the blueberries, lemon and sugar. Keep on medium heat.
In about 5 mins, the berries will start to cook and sugar will melt. You can smell the berries cooking and the compote bubbling up.
Lower the heat. With the back of the spoon squish the fruits.
Once the compote has thickened, take it off the pan and cool it.
Blend in the rest of the ingredients with the blackberry compote.
Serve chilled topped with dollops of ice cream or whipped cream!
