This is my go-to soup not just on days that I want eat a healthy light meal, but also want to satiate my palate!
Try it and you’ll know what I’m talking about. It can as easily become a gourmet dish as it can manifest into a homely, comforting meal.
As always, my soup recipes are simple and quick!
Serves 2-3 bowls full
Ingredients
Peas: 2 cups fresh/frozen
Potato: 1 medium sized
Onion: 1 small sized (preferably white onion)
Garlic: 4 cloves
Parsley/Coriander: 2 teaspoons dried or 10 fresh leaves
Oil: 2-3 tsps
Pistachios: 1 tbsps shelled unsalted
Water/Broth: 2 cups
Salt and Pepper to taste
Method
Roughly chop the onion, potato and pistachios.
Saute onion and garlic in oil for 30 seconds and then add the pistachios. Keep some pistachio slivers aside for garnish.
Add peas and potato to 2 cups of water and bring to boil. Now add parsley, salt and pepper. Once the vegetables are cooked, take it off the heat and let it cool.
Add the sauteed onion, garlic and pistachios to this and puree it.
Serve warm garnished with Pistachio slivers!
